Whether you want to fully try being vegan or just want to introduce more veg into your diet, January is a great time to mix it up in the kitchen. We’ve all binged over Christmas and it’s time to bring a bit more colour back into our diet. We’ve pulled together some healthy but delicious recipes for you…

Nutritious Soup Recipe

There’s nothing like a warm bowl of soup during the winter months. It’s both comforting and a great way to eat more vegetables, especially your greens. This broccoli and kale recipe from BBC Food is packed full of nutrients to help your immune system.

Broccoli & Kale Soup Ingredients

  • 500ml vegetable stock

  • 1 tbsp sunflower oil

  • 2 garlic cloves, roughly sliced

  • 1 thumb-sized piece ginger, sliced

  • ½ tsp ground coriander

  • ½ tsp ground turmeric

  • pinch of salt

  • 200g courgettes, roughly sliced

  • 85g broccoli

  • 100g kale

  • ½ lime, zested and juiced

Make soup even easier with the Morphy Richards 501022 Soup Maker. With the ability to make 1.6 litres of delicious soup, just slice up the veg as per the recipe, add some liquid and decide your texture to make your soup of choice. Make sure to add enough hot liquid (most recommend 750ml) and avoid adding frozen veg as they can make the blades blunt. Fresh Bread Recipe

To make it, just add the water, sugar and yeast in your breadmaker’s pan and after five or ten minutes, add the remaining ingredients.

Wholemeal Bread Ingredients

  • 1½tsp yeast

  • 2 tsp sugar

  • 600g wholemeal flour

  • 430 ml warm water

  • 1½ tsp salt

  • A handful of your favourite seeds (e.g. sunflower, sesame, pumpkin)

All you have to do is add your bread mixture, water and your chosen bread or dough and set your timer. You can even prep in advance and start the timer 13 hrs later. You can make 3 different loaf sizes and even select how you want your crust to look. You can even make jams and compotes to complement your breads.

Healthy Air Fryer Snack Recipe

There are endless possibilities when it comes to what you can make in an air fryer. From roasts to chips and crisps, you can do so much with this appliance. With only one spoon of oil, you can make transform what were once unhealthy treats into healthy meals throughout the day.

Avocado Fries Ingredients

To make this snack, pre-heat your air fryer for at 3 minutes. Mix the dryer ingredients in a bowl, slice your avocados, and gently toss them in the mix. Spritz with oil and cook for 8 minutes, giving the basket a shake halfway through. and seasonings in a shallow bowl or pan.

  • 2 medium avocados 

  • ¼ cup panko crumbs

  • ½ tsp chipotle chile powder

  • ½ tsp garlic powder

  • ½ tsp coarse salt

  • Avocado or olive oil spray

Vegtastic Slow Cooker Recipe

A multicooker is a fantastic addition to any kitchen. You can let your stew simmer while you’re working, have flavourful porridge ready when you wake up and cook in bulk and easily keep it warm when entertaining. All you have to do is prep your ingredients and the multicooker does the rest!

Ratatouille Ingredients

To make this, chop all the veg as per the ingredient list. Layer your ingredients in the multicooker in the following order: onion, aubergine, courgette, garlic, peppers, tomatoes, sprinkle herbs, salt pepper, half of the tomato paste and repeat. Cook it on low for 7 to 9 hours and enjoy!

  • 1 large onion, cut in half and sliced

  • ½ large aubergine, sliced, cut in 2 inch pieces

  • 2 small courgettes, sliced

  • 1 garlic clove, minced

  • 1 large green bell peppers, de-seeded and cut into thin strips

  • 1 large tomatoes, cut into 1/2 inch wedges

  • 5 Tbsp tomato paste

  • ½ tsp dried basil

  • 1⁄4 tsp oregano

  • ½ tsp sugar

  • 1 tsp salt

  • 1⁄4 tsp black pepper

  • 1 tablespoon fresh parsley, chopped

  • 2 Tbsp olive oil
